Easily a billion calories…
We had a silent auction bake sale at the office yesterday, to raise money for the United Way. My caramel chocolate brownies (well-known around the office, since I make them for many pitch-ins) raised $18 and I’ve gotten lots of requests for the recipe. So, here it is for everyone to enjoy.
Chocolate Caramel Layer Bars
In a double-boiler, melt 14 ounces of light caramels (unwrapping all those buggers is the hardest part of the recipe!) with 1/3 cup evaporated milk. In a large mixing bowl, combine one package of German chocolate cake mix, 1/3 cup evaporated milk, and 1/3 cup melted margarine or butter. Press half this mixture into a greased and floured 9 by 13 pan. Bake at 350 degrees for 6 minutes. Pour the melted caramel mixture over the cake layer. Sprinkle one cup of chocolate chips over the caramel layer, and then crumble the remaining cake mixture over that. Bake for 15 to 18 minutes. (It’s hard to tell when it’s done, but the whole thing will be such a gooey mess, it won’t matter too much if it’s slightly underdone.) Cool slightly then refrigerate for 30 minutes before cutting. Enjoy!

Don’t you need to give Barb Hemphill, one of our Girl Scout leaders, some props for the above recipe?!? They are the best no matter who makes them I suppose

I do always call them Mrs. Hemphill’s carmel brownies…. I was asking Mom about her at Thanksgiving and wondering what she and Mr. Hemphill were up to.
I discovered an excellent variation on the recipe — sprinkle a layer of cashew pieces over the caramel. I don’t know why we didn’t think of this before! I had some left over from the 22 batches of Chex Mix I made this weekend.

These are easily my favorite brownies as well! I got the recipe from a dear friend and make them for every party. My fiance made them for a church gathering and no one could believe he actually made them himself!!
